There's no reason to rev it high, it's not worth running it over 6k, all your power is going to be under that anyway.
E85 won't knock unless you're really pissing the engine off. Don't worry about it. Nick had a junk ass GTP with a Gen5 on manifolds and stock valvetrain, and it never knocked....ever.
