A couple times over this winter, I just turn my car on and it has the ABS light on and then Trac is off because of it. When I turn the car off and turn it on, it's gonna and then it's fine...

Also, when I stop quickly, I feel the car around 15-10 mph, jerk forward. This is when only brakes are engaged..

Could this affect the speed sensor and give me the random spikes in speeds in my HUD too?

Yes you have a bad wheel bearing or 2.
