Thanks again for the comments everyone. The shop might have been trying to shy you away from it because of the amount of time it takes to do. They'd have to charge quite a bit to make it worthwhile for them.
Really the biggest thing when doing stuff like this is patience and imagination. For the radio the start was staring at it and figuring out how to attach it into the dash. I used banding straps. Then dremel time removing the material that was in the way. After that a couple pieces of wood and bondo and ALOT of elbow grease sanding and shaping.
I was going to get a 2nd bezel to do but then I thought...what if it turns out the first time? Why have a 2nd bezel hanging around? I ended up driving around with no dash for about 4 days while I worked on this. Take your time and you can get good results.
