I met with my tuner today and he told me my map didn't have enough parameters programmed into the tune because the tune was maxed out. He uses HP tuner, does this make any sense?

We use a MAF based tune, the MAP sensor doesnt really get used that much.
You wouldnt disable the MAF sensor to tune the MAP (ve) on one of these cars, wouldnt really work and would be a waste of time IMO.
And just look at the VE table, it stops at like 105 kpa or something which is like .8 psi or whatever. The MAF sensor reads the air coming in to determine fuel, it doesnt really care what the MAP sensor see's for KPA. It might for torque mngt though.
Probably the only thing I could ever agree on with darkhorizon, find another tuner
the other thing he said that I thought was strange was that boost is boost and it doesn't matter where it comes from.
10 psi from a supercharger is the same as 10 from a turbo, 10 psi may make the same amount of power from whatever source, but when it comes from a turbo the power comes from a more efficient source. correct me if im wrong, or expound on this, I appreciate it.
What he failed to say was that 10 psi from a supercharger also robs the engine of power to create the boost. Most refer to it as parasitic drag. Turbos use exhaust gas to cake boost which is 100x more efficient
