    Lets go with the simplest most possible reasons;

    1. Is your car stock? Or modded? What kind of mods?

    2. Does this happen when driving highway and when in moderate to heavy traffic? It is normal for your needle to jump up a bit when you are in traffic and to go down when you're on the highway free of traffic. Though 70 to 100 is extremely cold and you're running extremely rich.

    3. Have you tried bleeding out the air of the system?

    4. What kind of thermostat do you have? If you don't know, you should probably change that out first.

    5. Is your coolant level correct? Check if it's dirty with mud like crap on the radiator cap. Is your radiator full of just water or just coolant and not 50/50 mixed? (make sure the car is cool of course before doing this)

    6. Other than that, are the fans kicking in at the right time and are they both working?

    EDITED TO INCLUDE Bio248s suggestion.

    sounds like air in the system. otherwise the needle shouldnt move that much that quickly.

    however, your numbering is way off, 70 and 100 are super super super super super super cold.

    That's right how could I forget. Maybe you need to bleed out the air. Now if nothing but coolant comes out then start with what I mentioned. If you need help say so.

    And yes, 70 and 100 is way too cold. Perhaps he don't even have a thermostat or a 160 with stock car.

    70-100 are pretty normal in a Canada car.....metric.....70 C = 158 F and 100 C = 212 F.

    no, going from 180-210 slowly is normal. Considering traffic or open roads. once moving temp should be a steady 180-195*, then in traffice it should rise slow and settle around 210* where then the fans kick on at 212-216ish.

    I wasn't trying to imply that bouncing from 160 to 212 is normal, just that the temps are not as cold as people thought. I do agree that it is far from normal operation.

    what I meant by bouncing was that it would never be still. It would move up to 210 then back down to 160 and then back up. I was also considering that stops and typical traffic with that.

    Do you have Autozone or something similar where you live where they offer free OBD II scans? Only thing I can think of is an electrical issue because if your fans aren't turning on at the correct temperature then that's pretty much your problem.

    I would say take it to get scanned or have a mechanic take a look at it, in the meanwhile continue to try and bleed the air because sometimes you don't get it all the first time.
