Since my a/c doesn't work and I like to drive around with my windows down and sunroof open I was wondering if I could take it off and replace it with just a pulley? Ive been told I could and I would a see performance gain but I wasnt sure if this is true or not

Sure you could...ZZP sells the pulley. Dk if you'll see much of a performance gain though

    This.

Ac is a nice thing to have available I would not remove it just because it doesn't work. Parts are easily available and very inexpensive fix the damn thing. It's not a full blown racekar.

If it's empty it's leaking somewhere. You'll have to find and fix the leak

Your local parts store should be able to get the AC bypass pulley kit for you. Cheaper than ZZP typically. Definately less when you add in shipping.
I drink..so consider that when reading my posts.
