The theory behind the whole thermostat thing in general is more hp....will you get any or see any gains other than the temp needle not going as high...no...lol
Yeah, personally I used to run with a 180° stat up until recently. Anymore when I drive my car, I try to get the best mileage possible. And you will get better mileage with a stock stat. The 180° stat will cause lower mpg.
The idea behind it is to keep the engine running cooler, thus keeping the incoming air cooler and more fuel. Some people would also put them in to keep the engine cooler to combat KR. But if you have a CAI, you won't need to worry about the incoming air so much. And if your car is modded correctly, you shouldn't have to worry about KR. So it is really a moot point.
You can do what you want, but I will not be running a cooler stat, except for at the track.
