Did you change the upper intake aswell? Or just the gaskets? It is highly recomended to change the intake.

UPDATE: My dad came up tonight and worked on it. Took the plugs out and they had fouled [after 22 miles]. So we sprayed (something flammable i didnt see the can) and burnt off the grossness and the plugs smelled like pure antifreeze. Plus the oil level is reading too high. Then we turned the engine over once with the plugs out and especially in cylinder 1, it was a mix of gas and antifreeze (looked brown) spewed out on the ground. Here's the plugs BEFORE the clean and after he drove it to the house:

So we put the cleaned plugs back in and managed to get it cranked and it was just puttin up white smoke and it smelled like antifreeze. We ran it a good 10-15 minutes trying to burn it all out of there. At first it was rough and wanted to flood out when you gave it gas but then it cleared up and started running smooth. I idled it up pretty high then just let off and it had a rough idle then it would smooth back out. The last time I did that though it died and we called it a night until we can try to troubleshoot/fix later.
So the question is...why is coolant back in the engine after a new LIM.
We are curious what the torque specs are for the LIM (thinking maybe they're off and it's leaking coolant)????
