Unless you want the check engine light on all the time, I would not remove the cat. converter. I would suggest either putting on an aftermarket muffler - whatever brand you like - or what I would do is put the shell of the muffer on (fake muffler - all the looks of a muffler, loud as hell).

Here's how I would do it:
Take off exsisting muffler - cut it in half (length/width along the seam)
Pull out all the stuff inside the muffler
Weld the two pieces back together
    Weld muffler back in place

Just an idea. Maybe you want something a little quieter.

I've got a high-flow cat with a glasspack resonator and dynomax mufflers all on 3" piping, love the sound and it doesn't get raspy.
As far as those youtube links you posted the 1st gp sounded like **** IMO, and unfortunately its damn near impossible to get a V6 to sound like a mustang GT. We may be able to beat them in a race but damn they sound good.

togs, 3" magnaflow cat, 3" pipe to dual 2.5 ", cherry bomb vortex mufflers - my current set up and I'm finally happy. No rasp or interior drone.

other than that stay away from v-force mufflers, cheap flowmaster copies, and just too friggin loud.

Way too raspy IMO, but at the same time it does sound good. Idk I can't decide lol, but if you like it, doesn't matter what my opinion is anyway.

a completely stock exhaust that has no leaks is quiet and damn near the best sounding exhaust you can have.

Its hard for a 3800 NOT to sound like complete ass. Oh well I like my setup but just remember you will have to realize that unless you get a cam or headers it wont sound great.

this is the best setup ive ever heard, with blue's coming in at a close second

I'm beyond dissapointed to think my car comes behind that thing...it sounds horrible. The SLP Catback is very raspy. Plus he only revs it to maybe 2K and I can already hear how raspy it is...
