I been googling this issue but and I've tried a couple things to correct it over the weekend. I had a problem with my low-coolant light repeatedly flashing after I just replaced the coolant a couple days before. Sunday morning, the temp light came on and my car overheated. I discovered that the elbows that transfer the coolant to the engine had been cracked and was leaking coolant so I replaced them. I also found out that my thermostat was extremely old. So I replaced that too. And just for good measure, I bought a new clamp for the coolant hose and replaced that too.

Everything was fine afterwards. No coolant light, no temp light and the needle remained at about 180-210...So the next day I had to drive quite a distance. The needle was at about 210-260. As I kept driving, I'd notice sometimes it'd spike about 260 and sometimes almost into the red but the then drop again right about the 260 mark. It's freaking me out. I'm thinking maybe I need a new temp sensor next?

Any idea what the hell this could be?

Did you bleed the cooling system of air?

No, I didn't. I just looked up a guide on how to do this and it seems like it could be the problem. I just have to get a funnel and I'll give it a try.
