On my 00 gtp I want to change all the struts, but not sure if I should do strut assemblies to get new springs, or just swap the struts with the upper mount.

All depends what you're looking for. If you have the typical rear sag, you may want to change springs too. Quick struts make for easy work, a bunch of bolts and its done, no need for spring compressors. If you have a set of aftermarket springs, well that's a different story then as you'd probably want to keep them.
KYB GR2 Quick Struts is minimum is what I have and what I'd do. Good luck!
KYB Part #'s (I Think) Front SR4002, Rears SR4003, SR4004
In my experience, changing the rear springs is usually a good idea. Unless the fronts are sagging, or you plan to lower it, stay with the stock springs because new replacement ones tend to raise it about 1in over stock, giving it a bit of a monster truck look. I have w-body store springs on my gp, and while it sits perfect, the ride is WAY to stiff. My kyb agx struts have just enough power to make it tolerable.
