Is there any way to access the gauges in the dash on my 2000 gp? I would really like to be able to get to them so i can fool around with some colors...

...the entire thing that goes around the steering wheel, gauge cluster, radio/AC/DIC...that's all one piece. you need to take off the plastic part by your knees below the steering wheel first and then just pull the bezel off. its just held on by clips. make sure not to rip off the fog light switch since its plastic riveted to the bezel and connected with a quick disconnect cable from behind.
