The roads I work off of get pretty nasty at times and I know i'm over due on new shock/struts. What would be a good brand that is pre assembled that will handle well on dirt roads?

why so worried about preassembled? with a few hand tools you can swap the springs over from the old set. you're best off replacing the top mounts, though.

I'm not sure pre assembled front struts are available for the later generations of grand prixs. I've looked many places and one option is order everything needed and have a shop assemble them for me. Rear strut assemblies should be available. As far as brand recommendation I am no help.

Like the OP, I will opt to not mess with a spring compressor when I change my struts. Not worth the potential risk of serious injury. Plus having a shop assemble everything will likely save some time.

    Napa has quick struts.
Edit: guess they don't for the front. I'm pretty sure I have seen them somewhere though. Maybe it was on eBay.

Well I figured I could go the easy route and fine some pre-assembled and just swap them out instead of a shop doing it. I don't think I have the tools to do that work on my own =/

even if you swap it, you'll still need to go in for an alignment afterwards.

It doesn't take much to do the swap yourself.

A few basic sockets, a BFH, some anti seize and if you decide just to reuse your stock springs then a coil spring compressor which you can rent locally from the parts store then are refunded back when you return it. If you go the quick strut method you don't need it. A jack and some jack stands.

Keep in mind whichever you're you'll take you'll still want to get it aligned afterwards at the shop.
