Would i be better off just keeping the GM head unit and just removing the Bose amp and Bose speakers
and just buy a good 4 channel amp and buy hi quality speakers for the doors and rear deck?
Personally, I'd get an aftermarket deck, run all new speaker wire and get all new speakers with the 4 channel amp. The Bose stuff is overrated and the wiring for it all is kinda a mess from what I've read.
Then again most audiophiles will tell you to run a sub, delete the rear 6x9's and just get a good set of front speakers for the correct sound stage. It's all what you have budget/time for I guess.
If you get a good enough head and good enough all around speakers, you won't even really need a full sub.
The GM head unit is extremely dated at this point. I'd advise doing a full reinstall.
If you are on a tight budget and need to go in steps, I would go
Rear speakers->Front speakers->Head unit. In that order. Bearing in mind, with a new head unit you should cut out the Bose amp and do a speaker rewire.

IIRC the wiring harness from the stereo to the amp is the same as the harness in a normal system (Bose only) so it doesn't need all of the dash ripped apart, you can find where they lead to the amp and continue the signal from there.

Stock head unit is garbage, and that goes for any preinstalled unit, in any car. They don't have the same amplifiers, etc. But, the manufacturers get you in deep because they build function into the head units... But for an older car, it's a no brainer! Bose speakers have paper cones, etc., and the amp doesn't have the power or signal to noise ration an aftermarket would have.
Get a head unit that has all the bells and whistles, ie, BT, GPS, Android OS, etc.
get separates for up front, silk dome tweeters, crossovers
get a decent set for rear deck
get a 4 channel amp, or 4+1 and a small sub, no need for anything crazy

No need for sub actually, does just enough with Infinity's to not need it, but amp driven, head unit wouldn't be able to keep up although it sounded fine with Pioneer and amp disabled. And "Sound" is relative, these cars I felt are pretty good acoustically, and I like my music, so have no problem investing a little. By the way, the newer head units like mine, even though it's older now, take SD cards, I have my entire music collection on there, is awesome!
