Car keeps dying

I have a 2004 Grand Prix GTP. I haven't had any problems since I bought it in October last year. Now, it doesn't seem to want to stay running. If I'm at a stop light, the RPMs will flicker from 500 to about 2800. I have to keep one foot on the brake and one lightly on the gas to keep it running so it doesn't die. It occasionally acts like that while I'm driving at normal city and highway speeds. Replaced the MAF sensor, that didn't do anything. Can't figure out if I'm having a fuel delivery issue, or a spark issue. Maybe fuel pump, maybe distributor? Anyone have any ideas?

check engine light on? if so have it scanned yet?

kinda sounds like a vac leak, but hard to tell.

IAC or idle air control valve possibly. They like to gum up with carbon and not work properly.

When it dies while driving, is it when you foot is off the gas?

Remove and clean the TB, especially the back of the butterfly as it is likely carboned up. Likely the MAF was ok and was just dirty. FYI these cars can be picky on aftermarket MAF sensors so hopefully you still have the old one around. Has it had a tune-up recently?

I got an OEM MAF sensor believe it or not. I still have the old one just in case. I'll make a note of that

If you can keep it running with your foot, I'd say IAC for sure.

A few months ago when I swapped my motor the donor would start up and die. Long as I gave it the faintest bit of throttle it would stay running.

I pulled the IAC off and it was so full of carbon you couldn't see the spring on it. Tried to clean it up but the pintle poped off. Replaced it with my original and problem solved.

This pic is from a NA motor, but it's close enough. Just two small torx screws hold it in.

I still to this day want to know why the N/A cars had that ignorant bracket bolted from the TB to the LIM.
