The other day i started to notice im getting a rotten egg smell from my car, i read it may be from a partially plugged catalytic converter. So my question is if i take the catalytic converter out and gut it is it going to make my engine light come on?

Most likely the light will come on. If you gut the cat there's nothing cleaning up the emissions. The rear 02 will set a code.

also my resinator is bad, i herd some people use glass pack in place of the resinator. Does it really make that much difference using a glass pack or straight pipe?

If anything use a glasspack..straights pipes are loud! A glasspack is very similar to a resonator. Plus they're cheap I think you can get a thrush one from advance for like $30-40

No problem it's definitely worth the $7 or so. Worse case scenario you didn't spend much trying.
