Because that's the IAT sensor...it has nothing to do with controlling engine temps...that just tells the PCM what the incoming air temps are. It has been pretty hot recently...sure that isn't it...plus if you still have a stock tune...with stock fan turn on points...and a stock T-Stat...200* isn't hot...when your getting past 228*...then I'd worry.
Mine's gotten up to 230* a coupe times.
