My 2000 grand prix has been giving me problems when you first crank it up it runs good but after you go around 15-30 miles it starts hesitating and not wanting to go like its running out of gas but if I stop and cut it off and let it sit a few minutes I can go for about 5-10 miles before it starts doing it again can anyone help me figure this out thanks

Cat, but O2 MIGHT be the culprit. Check the cat. If it is the cat, be sure to check out what made it fail. Oil? Physical damage? Fuel? Catalytic convertors don't just fail like that.

A 13-year old cat? Well... maybe. Cats last ~150,000 miles. At 12,000/year, you're at 156,000 miles.
Irridium spark plugs last 100k mi and work just as well as copper. Copper is a waste on N/A and only lasts 15k mi. Don't use Platinum.
Use 195* tstat unless you can thoroughly explain why not; 99.9% don't need a lower temp.
Almost any oil filter, ever, is of higher quality than ACDelco. Spend $6+.

If it was the cat why wouldn't it run like that all the time instead of 15-30 miles of driving

Heat causes expansion... its a honey comb design that is probably getting clogged up, expansion causes the air way be blocked even more.
Now, not that this may or may not be the problem, but if you have recently changed the plugs you may re-check them, I once had one crack and it didn't set off the miss-fire code but shuddered something fierce once the engine got warmed up to operating temp. just a thing to consider, and its free to check.

do you have a check engine light on? if so, get it scanned and we can really go from there. Write the code(s) down, and let us know which ones it/they is/are.
