The oil sensor is a float switch. It protrudes about 3" into the pan and it's all plastic. I think if you're careful and use an easy out, you can get it out without trashing it. It's not that tight of a fit into the bung (ie you dont need a ton of torque to remove it) as it's sealed with an o-ring and flange (not via the threads). I bet if you got an easy out in there and it grabbed, you could remove it without a wrench and in one piece.
If it were me, I would try this as removing the oil pan is a gigantic pain in the ass.
