The stock tire size is 225/60R16 and we can stuff a 235/55R16 on the stock rim. Why not a 235/60R16?

You can, but the speedometer and odometer will be off. Plus, that much sidewall looks like a truck tire.

I am just afraid that they will be too spongy in the corners. What kind of summer tires is everyone running? My potenza re750s (i think) are pretty much done. I think I have a few months left all depending on how much I drive the car. I am leaning towards the Falken Ziex ZE-512. Maybe I can get the falken fk452s in a 225/55r16 and give up a 1/4" for a softer tire

All that sidewall will make the "spongy" worse, not better.
