I might be able to help you with this. I've made a couple of mail-order tunes for SC conversions of F-body 3800s before. But I am going to caution you that nobody (including me) can make a really good mail-order tune for you unless they've already tuned something exactly like you are doing -OR- if you can get them scan data.
Having said that, no matter what I would want to see some scan data logs from your car once you got it up and running using the first base tune I made for you (if you had me do it). That way I could make sure the fuel and timing were safe for WOT operation.

Ok. You have two choices then. You can use Grand Prix GTP programming modified to work with the manual transmission and set up to work in your car. This will allow you to use a 2-bar MAP sensor and when scanning it will give you all GTP-specific PIDs. The GTP programming is only set up to use one front O2 sensor stock, but there is a switch in the calibration options of this programming to activate dual bank fuel control, but I don't know if the GTP OS will work properly with it and I'm not sure when you scan it as a GTP PCM the 2nd bank O2 sensor data will be displayed.
If you are really concerned about only using 1 O2 sensor monitoring only 1 bank of exhaust, you can always weld another bung into your Y-pipe where the two banks come together and put the single O2 sensor there. But I really don't see a problem with the O2 sensor only being able to monitor one bank of exhaust (yes being able to sample exhaust from both banks would be preferred but it is not absolutely required).
The L36 Camaro programming cannot be properly set up to understand a 2-bar MAP sensor. Not really a big deal since the MAP sensor does not play a big role in these calibrations unless the MAF sensor fails. Like I said before, I've tuned a couple of Camaro/Firebird L36 PCMs to work with SC engines and haven't run into any issues.
So it just depends on what you want to do. I should be able to set up a base tune that will run your engine good, but I would like to see some scan data from you so I can verify settings before you really start beating on it.
