try testing your thermostat by putting in hot and cold water to see if it opens and closes

A coolant leak shouldnt cause overheating? What????

Uhhh yeah, fix those coolant elbow and re-bleed the cooling system, that leak is allowing air back into the cooling system and causing it to overheat on you.
