Guess based on the comments I have been reading on here I will go with a 195* thermostat when I replace all of my hoses. Anything is better than the 10 mpg I am getting right now.
Couple things, you only ran the car for 4 miles. How do you know it was completely warmed up? If you have the scanner on it, you should be able to watch the coolant temp rise from cold and heat up. When the t-stat opens, the temp will start to drop. You t-stat temp is going to be very close to where the coolant temp stopped rising and started dropping.

FWIW, if you are worried about it, a t-stat is $8 and takes all of 5 minutes to change.
