So i just bought a 2003 GTP, with every thing on it of course, and while i drove it off the lot, i realized that the temperature gauge isn't moving above 160', is that normal for these cars, or is the T-stat band or the sensor?

perhaps someone put a 160 degree thermostat in it, perhaps its a failsafe thermostat that has gone bad, and is now staying open all the time. i would start with a new thermostat
