I need help figuring out a problem. My low coolant light blinks. once about every 3 seconds almost like its an alarm blinking light. My coolant is not low and just had a new radiator put in about 2 months ago. Anyone have any idea why it could be doing this

clean the sensor before you change it, 50/50 chance it will work again. Removel it from the radiator and you'll see how mucy gunk is on the sensor end.

that defeats the purpose of having a low coolant light.

Yup, I drove around with it un plugged for almost a year after I bought my car. Did not even know. Just check your coolant every now and then and save the money from buying the sensor.
