"Sometimes the engine can get a little too hot when you climb a long hill on a hot day, stop after high-speed driving, or idle for long periods in traffic."

So I'm just wondering if these temperatures should concern me. I have a stock 195 stat installed, system is full and properly bled, no blockages or leaks.
1)I've noticed lately that with the AC on, driving through city traffic(less than 25mph), my temp will rise pretty quickly from 195-198 to 209-213. I have not seen it higher than that with AC on because traffic will thin out again. Idling with AC off, it gets up to 220, then falls back to 200 before rising again. What bothers me about the temps with AC on, is that turning the AC on turns on the radiator fans, if the fans are already on, they wont be turning on at 218. Im just wondering how high it could go and still be "normal"
Climbing a mountain, Ive seen it get to 215, and that was at a pretty good speed, so airflow was not an issue. It was also 50 degrees out.
2)As the quote from the manual states, overheating can occur upon stopping after high speed driving. Why would that be so? I would assume if youre cruising at 70 with the engine between 195 and 200, would it not simply rise to 218, and kick the fans once you stop? Same for long periods of idling, wouldnt it go 200-220-200-220-200 all day long?
3) What is considered "a little too hot" 220? 230? 250? Personally, Im not crazy about the fans coming on at 218. That puts the needle one notch over the middle line(210). If i see 220 on the highway, as far as I'm concerned, thats a problem.
Thanks.
