headers, and stock cat-back is not restrictive until way more hp than you have now.

    Read and read some more.

Exhaust sucks, you gain zero power from anything after the cat converter, and 90% of aftermarket exhaust sounds terrible and drones.

Best bang for your buck would be headers.

Being a GT, you will have little to no gains from headers currenty.
    Bolt ons to consider:
    ZZP ER rockers
    ZZP HV3

Bolt on's to stay away from
    ZZP TB heat shield
    ZZP TB spacer
    ZZP plug wires
    MSD coil packs
    Bosch spark plugs
    Bosch O2 sensors
I drink..so consider that when reading my posts.

As a former bolt-on GT owner I can tell you first would be to make an intake. Then since your a GT you can either do headers or the ideal ZZP plog and a 3in downpipe. With those 3 mods you will gain some decent power thruout the powerband just to get things going. Then the big mods will come into play like the ZZP HV3, ER rockers and a tune. Once all is said and done you will be plenty faster both off the line and from a roll. You will probably gain around 40hp or so and you could always add enhancements too such as a shift kit, poly mounts, and alt voltage booster.

    Do exhaust first.

    Intake isn't near as restrictive.

Actually, headers would get rid of the U-bend. So they'd help a little bit.
Irridium spark plugs last 100k mi and work just as well as copper. Copper is a waste on N/A and only lasts 15k mi. Don't use Platinum.
Use 195* tstat unless you can thoroughly explain why not; 99.9% don't need a lower temp.
Almost any oil filter, ever, is of higher quality than ACDelco. Spend $6+.
