I have these wheels going on my car in the winter, I wanted to upgrade to the fbody brakes as well, I have heard rumors that the Fbody brake set up does not work with these wheels.
Has anyone tried?

f-bodies do not fit under crosslace wheels.

Like do they rub on the crosslace? could i just grind some aluminum out?

you might be able to grind enough of the caliper away to clear them, but why would you want to ruin your calipers? you could also think about running a small spacer, too.
