I've used both in the past with no leaks either way.
Yup, I've used both and haven't experience any leaks either.
I just installed the sensor with nothing. new sensors come with paste or something on them that will seal when they are new, but after that, you need tape or paste or something to seal it up.

The new coolant temp sensors usually do not come with any form of paste or sealant on the threads.
Get plumbers paste or the sealant tape.
I'd rather be safe than sorry since it's half sitting in coolant it's whole life.
I just installed a new coolant temp sensor a couple of weeks ago when I did the Gen V swap (broke my old one). Replacement came with sealant tape already on it. Put it in and noticed a coolant smell after a few days, it was leaking. Pulled it out and put a thin coat of RTV on and all is good.
