I'm going to be painting my parts before I do my top swap. What does everybody use to mask off non-paintable surfaces like the gasket mounting surfaces? Is plain masking tape sufficient? If so, doe paint thinner clean the residue sufficiently?

usually paint thinner wont due the job just because their is usually some kind of oil, dirt or grime on it. use degreeser on everything and for metal just clean very well and maybe hit it with some steel wool. like valve covers just get them clean hit it with a little bit of steel wool and clean it with rubbing alcohol (what i did) and itll come out great
Like stated above use degreaser. I know at some local autopart stores that they sell Dupli-color in a big can that is degreaser. As for taping of areas I always liked to use blue painters tape (little bit more expensive) but will not leave residue when you take it off.
