My 2000 gpgt is running lean. Just replaced the upper and lower intake gaskets as well as the upper intake, thermostat, plugs, wires, fuel filter, air filter and cat. Its running so lean that the front manifold is glowing orange! I checked the fuel pressure and it was 42psi. Is that enough or is my pump bad? Please Help.

Could be a bad vac leak.

I took it to autozone before we put the intake on it and it had a P0137 code which is the oxygen sensor, but also says fuel pressure very high or low or pressure regulator. When we changed the intake gaskets you could tell they had been leaking so we thought we fixed the problem.

Well that you have a vac leak AND a bad o2 sensor, both of which cause the engine to run lean. With both those problems, you are running dangerously lean.
Drive it nice and don't jump on the throttle until you fix it, or you'll chip pistons quick.
