So I bought my wife a grand prix that immediately started giving me troubles. The Low Cool,ant light remains on no matter what I do. I am hoping that this is a production flaw. Anyone have any suggestions?

On my first grandprix which was an 89 i had that same problem, although its not the proper way to fix it I just removed the lightbulb which was inside the cluster itself since i had the temp guage also...I think it is just a sensor though
The "low fuel" and "check gauges" light staying on, or flickering, or dimming in and out is actually a very common problem on the '88 - '93 gauges. It's a problem with some solder joints (which seems to be a reoccurring issue with GMs) on the back of the gauge cluster. Here is a write up on how to fix that:

The low coolant sensor is highly prone to failure. They run right at $70 for the replacement part. Quite a pain to replace and there is no guarantee how long the new one will last either.
The good news is that they do not report their data to the PCM so you can just unplug the wiring connector at the sensor on the radiator tank. Light goes out & doesn't come back on and you do not get a check engine light.
You just have to manually check your coolant level instead of relying upon a sensor to tell you to add coolant.

I had the same issue with my Low Coolant light - Coolant levels are more than fine - in my 96.
I just pulled the sensor - you can see if and when you need coolant.
